I don’t know about your part of the country–but where I live this has been the coolest, rainiest and generally delightful spring/early summer we’ve ever had.  That being said, on one of our rainier days my sister & I were craving some warm soup.  She checked her pantry and came up with this salsa-tasting soup in about 3 minutes flat, this is her recipe.  The fresh lemon juice and cilantro give this salsa-soup a very light, bright, fresh flavor–perfect for summer.  Also, the lemon cuts the sodium overtones from the chicken soup base, so don’t leave it out! Growing up we had biscuits for breakfast all the time.  It wasn’t until I lived in my second or third apartment that I realized you can buy biscuits from the store–you know those pop-tube ones with obscene amounts of oil and fat?  My roommates kept making fun of me for my having a box of baking powder.  “Who uses baking powder?” they’d ask.  Well, if you’re making *real* biscuits, everyone uses baking powder.  To this day the pop-tube variety frighten me, I can’t help but get scared every time I open them.

These biscuits are one of my all-time favorite foods, and you can mix them up in less time than it takes for the oven to pre-heat, so don’t tell me “they’re just so much harder!”  Add this recipe to your cooking repertoire immediately, if not sooner.

I don’t know what it is lately that is making me crave “Summer Foods.”  First chicken salad, and now this!  My Aunt D. would make this particular deliciousness for all of our family BBQs.  I must have been feeling broccoli-deficient or something, because the other day this is the only thing that sounded tasty.  So I called her up and was quite pleased to find I had everything that was needed in my cupboard.  Score!  This recipe takes all of 7 minutes to make and it is essential that you use the freshest broccoli possible.  Try it, you will like it!

Lemon Custard, a.k.a. Flan 10 October 2008

My great-grandmother on my maternal side was famous for lemon custard.  Or rather, in our house she was famous for lemon custard.  I really don’t know much else about her cookery, but that she always had lemon custard in the fridge.  My mom talked about it every single time she whipped up a batch of lemony goodness, sprinkled with nutmeg.  For that reason I will always associate custard–and custard-based dishes–with a grandmother I hardly remember but love for her delicious legacy.  This dish is extremely easy to put together and tastes absolutely fantastic while it’s still warm.  Or cold the next morning for breakfast with banana bread and Pero or coffee. The last couple of weeks I have this indescribably craving for lemons and lemony things. I have made Lemon Madeleines again, and still had this insatiable desire for lemon. Growing up, my mom made these fantastic Lemon Bars with a dusting of powdered sugar on the top. I’ve had lemon bars before that have too much crust and not enough lemon. That is not the kind of lemony dessert I was craving, so I called my mom and got her recipe for perfect lemony goodness. I quickly whipped them up, impatiently waited for them to cool, and then myself and a certain Handsome boy of mine may or may not have eaten a half of the pan. Maybe. But wouldn’t you?

The recipe will be after the break; here’s the nitty gritties:

  • Total Prep-Time: 1 hour 45 minutes. 15 mins prep, additional 25 mins bake, 1 hour cool. So, make these before dinner. Or, make them for dinner. Ya know, whatever.
  • Was the recipe easy to follow: Super easy, one bowl to mix, one pan to bake. Easy-peasy.
  • Are the ingredients easy to find: Yes, just make sure you use fresh lemons! No artificial juice, please.
  • Do you need special equipment: No, but a cheese-grater (or lemon zester) and a lemon juicer help quite a bit.
  • Does the end result taste delicious: If by “delicious” you mean “24 bars were devoured by 1.5 people in 3 hours…then Yes. They were DELICIOUS!
  • Would I make it again: This is going to be added to my “Make Often” file, absolutely.
